Course Description

The perfect course to introduce you to the world of outdoor cooking, Gill Meller of River Cottage will take you through a rich array of cooking methods and recipes to turn you into an accomplished outdoor chef. By the end of the course you’ll feel confident cooking a range of foods – including fish, birds, and pigs – using varied outdoor apparatus.

You’ll begin by gaining an understanding of the principles of laying and fuelling a fire, developing knowledge of three essential pieces of cooking apparatus and how to use them effectively in your outdoor cooking. In the third lesson you’ll even perfect the art of cooking on just the embers of the fire as your tutor takes you through three wonderful recipes that can be cooked on the smoldering remains of a fire.

Once you’ve mastered fire itself, you’ll apply it in a variety of ways. First you’ll explore the possibilities for fish, learning first to ensure its sustainability and then how to perfectly prepare it outdoors. Then in the final lesson you’ll take a look at how to roast larger animals – birds and pigs, among others. It’s here that you’ll discover the joys of spit roasting on natural fuels, making the preparation of your food a real spectacle, perfect for an outdoor event.

Course outline

  • Relight my fire

    This lesson will begin with lighting and fuelling a fire, including which fuels produce the appropriate amount of heat for the task at hand. You will then be introduced to three different pieces of cooking apparatus, with a simple recipe that you can create for yourself being demonstrated on each piece. Finally you will learn how to build the relevant apparatus for yourself.
  • Fish and shellfish

    3 finished dishes using the best ingredients from the coast and land. Master the art of cooking the best sustainable fish and shellfish available in the UK in your hand made outdoor kitchen.
  • Baking in the embers

    Demonstrating the art of cooking with just the embers. Three complete recipes using just the embers of fire.
  • Spit roasting

    Discover different methods of cooking whole carcass animals and birds. In this lesson you will become confident with roasting an array of animals, up to even the size of a pig.
