Course Description

A well-chosen starter can set the tone for an entire meal, and Kerth Gumbs (executive chef at Ormer Mayfair) is here to help you deliver exactly that!

During this course you will learn how to create a delicate butternut squash veloute, with Thai Green curry foam and shortbread biscuit, followed by scallops adorned with coconut, carrot, lobster butter sauce and roe You will then meet Ormer’s top sommelier, who will take you through the wine pairings.

Kerth Gumbs is renowned for his ability to take the best of British ingredients and bring them to life with an international twist. Over the last four years, Kerth has put his own stamp on the Michelin-starred restaurant’s menu, and as a result Ormer Mayfair has remained very much at the forefront of London’s fine-dining scene.

At the end of this course, you will have learnt the secrets behind Kerth’s success, with a particular focus on how you can use classical cooking techniques to create impressive dishes.

    Showcasing his ability to put an exciting twist on basic ingredients, Kerth will take you through his process of creating a warming pumpkin and butternut squash velouté with a Thai green curry foam and a shortcrust biscuit. This starter is the perfect way to kick off your dinner party!

    Next on the menu are buttery scallops adorned with coconut and carrot, lobster butter sauce and roe. Working alongside the best wine suggestions, to ensure an excellent food/wine combination.

Ormer Mayfair was launched by chef Shaun Rankin, who received a Michelin star in 2005 for his first restaurant in Jersey. With executive chef and Great British Menu 2020 finalist Kerth Gumbs at its helm, Ormer Mayfair continues this celebration in the accolades it has received since opening.

Over the past four years, Kerth has put his own stamp on the menu by celebrating British cuisine with international influences. This is where his classical Le Cordon Bleu training, time in Michelin-starred kitchens, years spent learning business and managerial skills and influences from working around the world all come together, resulting in a menu that’s confident, classical, modern and playful. While the hotel that the restaurant is based in has the luxurious trappings of old-school opulence, Ormer Mayfair remains contemporary, exciting and at the forefront of London’s fine-dining scene. Kerth says that, for now, he’s focused on nurturing his team, improving the food and adapting to the struggles the hospitality industry is facing in 2020.

Ormer Mayfair has been voted one of the top five restaurants in London by the Hardens Restaurant Guide 2018 and is consistently rated as one of the top 10 restaurants in London for Fine Dining on TripAdvisor.

    The Tatler Address Book team has lined up Raymond Blanc’s famous Le Manoir aux Quat’Saisons, The Hinds Head by Heston Blumenthal in picturesque Bray in Berkshire, alongside London hotspots, HIDE and Ormer Mayfair. Each destination has opened their doors to the students at Learning with Experts in a series of compelling lessons. This isn’t just passive viewing. During the lessons, you will cook along with your peers, and be encouraged to try out techniques with the class and head chefs. You will share in each other's cooking journeys, and get feedback on your dishes from the Tatler team.
