A well-chosen dinner party starter can set the tone for an entire meal, and Kerth Gumbs (executive chef at Ormer Mayfair) is here to make sure that your dinner party starts off with a bang.
Kerth Gumbs is renowned for his ability to take the best of British ingredients and bring them to life with an international twist. Over the last four years, Kerth has put his own stamp on the Michelin-starred restaurant’s menu, and as a result Ormer Mayfair has remained very much at the forefront of London’s fine-dining scene.
During this course, you will learn the secrets behind Kerth’s success, with a particular focus on how you can use classical cooking techniques to create impressive dishes.
By the end of this course you will have created a delicate butternut squash veloute, with Thai Green curry foam and shortbread biscuit, followed by scallops adorned with coconut, carrot, lobster butter sauce and roe You will then meet Ormer’s top sommelier, who will take you through the wine pairings.

Meet Kerth Gumbs
Over the past four years, Kerth has put his own stamp on the menu by celebrating British cuisine with international influences. This is where his classical Le Cordon Bleu training, time in Michelin-starred kitchens, years spent learning business and managerial skills and influences from working around the world all come together, resulting in a menu that’s confident, classical, modern and playful. While the hotel that the restaurant is based in has the luxurious trappings of old-school opulence, Ormer Mayfair remains contemporary, exciting and at the forefront of London’s fine-dining scene. Kerth says that, for now, he’s focused on nurturing his team, improving the food and adapting to the struggles the hospitality industry is facing in 2020.
