Course Description

Vegan chef and plant-based restaurant owner Kirk Haworth teaches you how to cook stunning vegan and plant-based food.

This vegan cooking course will help you to celebrate veganism by using vegetables in innovative ways to maximise their flavour, with new plant based recipes to inspire you. Kirk has mastered the art and techniques of making vegetables the true stars of the show.

You will finish this course inspired by the endless possibilities of plant-based cooking, equipped with the foundational cooking techniques you will need to create delicious vegan dishes at a professional standard.

You will be guided through which ingredients you should be using, and Kirk will help you to create dishes good enough to serve in his own restaurant!

By the end of the course, you will have a full understanding of the environmental, wellbeing and nutritional benefits of a plant based diet.

Time to complete the vegan cookery course:

Every student is different but in general we think the whole course will take around 13 hours to complete including:

  • Video lessons: 2 hours in total
  • Course notes: 15 minutes per lesson
  • Your vegan and plant based cookery assignments: at least 2 hours per lesson
  • Interactive classroom time: 15 minutes per lesson
  • Tutor feedback review (Expert level): 15 minutes per lesson

You'll need:

A full list of ingredients for each recipe and equipment is included in the class notes, but you'll need standard kitchen equipment, and plenty of vegetables!

The course is suitable for cooks at all levels - from vegans looking for new recipes to professional chefs looking for vegan or plant-based inspiration for their menus.

Course outline

  • Adapting your pantry and tastebuds to become a plant based chef

    During this lesson, you’ll be taught how to kit out your pantry with key ingredients to become a plant based chef. You’ll be taught which ingredients you should have to hand to perfect your palette and cooking techniques. These include: Herbaceous oils, sauces, ferments, condiments, seed creams, toasted, seeds & nuts, dried herbs, dried fruits, preserved & pickled vegetables, pulses & grains, confit onions, coconut oil, flours, salts, spices, aromats and others.

  • First dish: Spring Risotto

    In this lesson Kirk will run you through the nutritional benefits of a vegan diet, and the many ways that it will improve your overall wellbeing. He will then walk you through one of his favourite core dishes to cook at home for you and your family - Spring Risotto.

  • Second dish: Seasonal Soup

    Next, Kirk will go into depth on how a vegan diet will positively affect the environment, and why we should all be making a conscious effort to introduce more plant-based meals into our diet. He will then demonstrate you can prepare your own Seasonal Soup, wherever you are in the world.

  • Fine Dining Spread

    Finally, Kirk will demonstrate how you can create a fine dining spread which will impress and entertain guests in your own home. This will include a starter, main course and dessert which can be enjoyed by everyone – even the meat lovers will be licking their plates clean!

Meet Kirk Haworth

Kirk Haworth - Food & Drink
Plates is a new high-end plant-based restaurant in east London which focuses on the partnership of food, art and travel, fuelled by the freedom of change. The concept was born following Executive Chef Kirk’s diagnosis with Lyme disease in 2014 which dramatically changed the way he now works, cooks, eats and creates.

After working in some of the world’s finest restaurants, including The French Laundry, Restaurant Sat Bains, and The Square and Quay in Sydney, Kirk opened Plates with his sister, Keeley.

Kirk’s mission was to create a menu which would appeal to people of all diets, and show how plant-based dining can be equally exciting and fulfilling as any other dining option. Each dish he creates is interesting, flavourful and fulfilling, demonstrating the huge versatility and exciting combinations that can arise when you know what you’re doing with your fruit and veg.
