What small column shaped trees, preferably with blossom or good for birds can I plant for some border height?

A columnar apple tree or Ballerina apple as they are known would be a good choice as they only get to 60-100cm wide, you get spring blossom and fruit to follow.

It's not columnar but it is small and beautiful - amelanchier lamarckii has the most glorious blossom in May, and berries in June, birds love it, I love it as its blossom is one of the most beautiful additions to cut flower arrangements in early may, and the juneberries are delicious as well as decorative!
