Course Description

Harrods' famous wedding cake baker and decorator, Rosalind Miller, teaches you how to bake and decorate cakes.

Rosalind will take you behind the scenes of Rosalind Miller Cakes where you will learn how to create elegant, contemporary, design-led cakes. With head-baker Becky on hand to demonstrate, Rosalind will take you through the basics of baking - flavours, colours, troubleshooting and more.

She will let you in on one of her big trade secrets – her signature sponge recipe, as used in her kitchen for all her clients.

You will learn how you can adapt this recipe to incorporate your own artistic flair, and by the end of the course you will have created a six-inch, layered, lemon sponge with a watercolour marbling effect.

Throughout the course, Rosalind will give you detailed feedback on your work, design ideas and tips for the times it doesn't quite go to plan...

Together with a group of creative and like-minded bakers, you will finish the course armed with all the tools you need to create stunning cakes, for any celebration!

Time to complete the cake baking and decorating course:

Every student is different but in general we think the whole course will take around 13 hours 40 minutes to complete including:

  • Video lessons: 1 hour 40 minutes in total
  • Course notes: 30 minutes per lesson
  • Your cake bake and decoration project: at least 2 hours per lesson
  • Interactive classroom time: 15 minutes per lesson
  • Tutor feedback review (Expert level): 15 minutes per lesson

You'll need:

You'll need ingredients and standard kitchen equipment as well as: a hand mixer or a stand mixer, scales, aluminium tins X2, a turntable (for decorating), cake slicer, oven thermometer, confection thermometer. Full equipment and ingredients list are available in the course notes and recipes.

The course is suitable for all levels - from people just learning to bake cakes or wanting to bake a cake for a special occasion to people already baking professional cakes (or chefs) or running a cake decorating business who want to learn cake baking and decoration from a leading expert.

Course outline

  • Introduction and getting started!

    Meet your tutor, Rosalind Miller. Find out how she turned her passion into the renowned business it is today, telling you about her journey from cupcakes to wedding cakes.

    Meet Becky the head baker, who demonstrates the recipe and method for making Rosalind’s signature sponge recipe – the exact recipe used in her kitchen for all her clients.

    You will learn the basics of cake baking, starting with ingredients before dealing with equipment - and then having a go yourself.

  • Flavour variations

    In this lesson you will learn how to adapt the basic recipe to make different flavours. Moving beyond vanilla, you will learn how to make a raspberry cake where the raspberries don’t sink. And then how to make a lemon cake with a delicious lemon syrup.

    You will also start to get to grips with oven temperatures, timings and lining cake tins.

  • Swiss Meringue Buttercream filling and layering

    Learn why and how Swiss meringue buttercream is used, and create exciting and unusual flavours to make your cake stand out from the rest.

    You will also learn how to cut the cake into professional layers for filling and finalising.

  • Finishing touches

    Get creative with your finishing touches! First you will create a ‘crumb coating’ – a thin layer of buttercream to seal in the crumbs.

    You will then learn how to create a final coating, before you are shown how to create an abstract ‘watercolour’ marbling effect, working with colours which complement each other.

Meet Rosalind Miller

Rosalind Miller - Food & Drink
It was a trip to New York’s famous Magnolia Bakery in 2005 that inspired Rosalind Miller to start baking and decorating cupcakes. Alongside her role as a lecturer in design at Central Saint Martins College of Art and Design, Rosalind set up a weekend market stall in Greenwich to sell her creations. Huge queues and happy customers soon showed her that she should develop her talents further, and Rosalind Miller Cakes was born.

Adding wedding cakes, dessert tables and other sweet treats to her repertoire, Rosalind quickly earned an enviable reputation as the go-to baker for elegant, contemporary, design-led cakes. Joined by her daughter Yasmine in 2013, the award-winning Rosalind Miller Cakes is now based in Brockley, London.

It’s Rosalind’s design background that sets us apart from other bakers, as she personally oversees all our cakes so they look as exquisite as they taste. It’s also earned Rosalind the accolade of wedding cake maker of the year for two years running, regularly seen our cakes adorn the pages of glossy magazines such as Brides and Vogue, and have our products sold in Harrods’ Food Hall. Our cakes have graced celebrations at iconic venues such as the Ritz and the Savoy, we’ve built human-sized gingerbread houses and sugar castles, and we’ve had the honour of catering for royal weddings across the globe.

Our cakes are enjoyed at weddings and anniversaries, birthday parties and baby showers – any occasion that calls for a sweet treat! From tiered wedding cakes adorned with sugar flowers to dainty cupcakes topped with buttercream, delicately iced biscuits to melt-in-the-mouth macarons, we put love and care into every bite.

While the business has grown and soared beyond our wildest dreams, we’re proud to still be a family-run operation with a handpicked, passionate team of bakers, decorators and cake enthusiasts. Each cake is lovingly baked and decorated in our studio, and then sent out to be enjoyed all over the UK and the world.
