Chef Kerth Gumbs teaches you how to one of Ormer Mayfair restaurant's classic starters - scallops and lobster.
During this course you will learn how to create a delicate butternut squash veloute, with Thai Green curry foam and shortbread biscuit, followed by scallops adorned with coconut, carrot, lobster butter sauce and roe. You will then meet Ormer’s top wine sommelier, who will take you through the wine pairings.
At the end of this course, you will have learnt the secrets behind Kerth’s success, with a particular focus on how you can use classical cooking techniques to create impressive dishes.
